Project Description
The physical properties and degree of oxidations of sonicated and non-sonicated structured lipids (SLs) were evaluated after 90 min of crystallization. The samples were measured by differential scanning calorimeter (DSC), rheometer, pulsed nuclear magnetic resonance equipment (p-NMR), and a polarized light microscope (PLM) for physical properties, and measured by peroxide value (PV) and Rancimat for the degree of oxidation.
There are 9 folders. Folders Figure 1, Figure 2, Figure 3, 4, and 5, and Figure 6, Table 2, Table 3, Table 4, Table 5 and Table 6 contain the experimental data reported in the manuscript. Figures 1 have 10 JPG files, Figure 2 have 10 JPG Files, Figure 3, 4, and 5 have 60 TXT files, Figure 6 have 90 TXT files, Table 2 has 1 CSV spreadsheet, Table 3 has 1 CSV spreadsheet, Table 4 has 1 CSV spreadsheet, Table 5 has 1 CSV spreadsheet and Table 6 has 1 CSV spreadsheet. There are a total of 20 JPG files, 150 TXT files, 5 CSV spreadsheets.
